VEGAN SWEET POTATO / CAROB MOUSSE

1 Cup cooked organic sweet potato

2-3 tablespoons raw honey

1/4 cup organic carob 

1 – 5.4 oz can organic coconut cream (use the entire can liquid and all) Nutiva Brand (Thrive Market, Amazon)

1 oz organic almond milk (Elmhurst. Thrive Market)

1 tsp Simply Organic vanilla  

1/4 tsp cinnamon 

Pinch of pink Himalayan sea salt 

Preheat oven to 375

Bake sweet potato in the oven until soft,  a fork will easily be inserted. 

In a blender or food processor add all of the ingredients and blend. 

Place the ingredients in bowl or parfait glass. Chill for one hour. 

CACAO VERSION (for serious chocolate lovers)

1 cup cooked organic  sweet potato 

2 tablespoons raw honey

1/4 cup cacao

1/4 cup organic date sugar (Health Garden. iherb or Amazon)

1 – 5.4 oz can organic coconut cream (use the entire can liquid and all)

1 oz organic coconut milk 

1 tsp Simply Organic vanilla  (Simplyorganic.com, Vitacost or Amazon)

1 tsp Simply Organic maple flavor

Pinch of pink Himalayan sea salt

RAW STRAWBERRY CHEESECAKE TART

Crust

15 dates presoaked for 30 minutes in hot water

1 1/2 cups raw organic pecans (Terrasoul.com or Amazon)

1 cup raw organic walnuts (Terrasoul.com or Amazon)

1/2 cup raw pumpkin seeds (Goraw.com, Vitacost, or Amazon)

1 tablespoon organic vanilla extract

1 tablespoon organic vegan butter (Thrive Market Brand or Nutiva at Nutiva.com or Thrive Market or iHerb or Amazon)

Pulse grind all the ingredients in a food processor

In a tart pan, (mine was 12 small tarts. Amazon), pat in the crust mixture. Make sure to generously pat in the filling around the whole tart cup. 

Filling 

1 – 8oz tub of Kite Hill cream cheese (Whole Foods)

1 – 8oz tub of Kite Hill Ricotta cheese (Whole Foods)

1 teaspoon of frontier co-op organic vanilla extract (frontiercoop.com, Vitacost, or Amazon)

1 teaspoon of frontier co-op organic lemon flavor (frontiercoop.com, Vitacost, or Amazon)

1/2 cup of organic sweet agave powder (Cherie Sweet Heart) It is very important to get the agave powder. This will be similar to powdered sugar. You will need that consistency to make this recipe work.

Topping

Washed, sliced organic strawberries. I like to add some maple or date sugar. They seem to keep better that way.

Here’s some internet advice:

The best way to clean strawberries is to rinse them off with water and then soak them in vinegar for about 20 minutes or rinse them and soak the strawberries in a water and baking soda mixture for about 15 minutes.

ALANA’s BLUEBERRY CHOCOLATE CHIP MUFFINS

1 3/4 cup Simple Mills Almond Flour Pancake and Waffle Mix

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 cup melted organic vegan butter oil  

1/4 cup organic almond milk 

1 teaspoon organic vanilla extract

1/3 cup organic maple sugar 

Three ripe organic mashed bananas

1/4 cup organic Hu chocolate chips (chopped a bit)

1/4 cup organic fresh blueberries

Preheat oven 350°

Prepare a muffin pan with cupcake liners

In a mixing bowl combine all dry ingredients, flour, baking soda, baking powder.

In a separate mixing bowl mash the bananas. To the mashed bananas add the date sugar, vanilla extract, almond milk and vegan butter. Combine those ingredients together. Add to the wet ingredients to the bowl of dry ingredients. Blend together well. Mix in the blueberries and Hu chocolate chips.

Fill the cupcake tin with the batter.

Bake in oven for 30 to 35 min.

ORGANIC CHOCOLATE COVERED STRAWBERRY ICE CREAM

CHOCOLATE COVERED STRAWBERRY VEGAN ICE CREAM BAR
9 large organic fresh strawberries
7-8 small organic dates
2 organic bananas
2 tbs raw honey
1 cup Kite Hill Greek yogurt
1 tsp Simply Organic orange flavor
1 tsp Simply Organic strawberry flavor
2 tsp Simply Organic vanilla flavor
Mix everything in a blender and fill your ice cream mold. (Amazon)
Freeze until solid.
CHOCOLATE COATING
Melt down (double boiler works best) 3 1/2 – 2.8oz. bars of Organic Thrive Market dark chocolate. I added some maple sugar to taste.
Dip or drizzle on the chocolate. It will harden immediately. Yum.

LEMON RASPBERRY BARS

*Bar Crust
1 – 1.3oz package of “Natures All”organic dried raspberries or blueberries (Amazon, Whole Foods)
1 cup organic almond flour (Anthony’s Goods. Anthonysgoods.com, Amazon)
3 tbs. Organic vegan butter (Nutiva. Thrive Market or Amazon)
3 tbs organic agave syrup (Thrive Market, Vitacost, IHerb)
1 tsp Simply Organic vanilla flavor
1/2 teaspoon Simply Organic lemon flavor

Grind up the dried fruit then mix all the above ingredients together.
Spray oil on an 8×8 pan
Firmly pat the crust into the square pan. Set aside and make the filling.

Preheat the oven at 350

*Lemon filling
1 cup kite hill ricotta
1 – 8oz pkg. kite hill almond cream cheese
1/2 cup organic agave
3 tsp stevia
1/3 cup organic lemon juice
2 tbs lemon zest
1/2 teaspoon Simply Organic lemon flavor
1 organic flax egg (1 tablespoon ground flaxseed mixed with 2 1/2 tablespoons water. Mix and let rest for 7-10 minutes)
1 1/2 tbs organic arrowroot powder (Anthony’s. Anthony’s.com or Amazon)

In a food processor whip up the two almond cheeses for a minute
Add all the rest of the ingredients and whip for another 3-4 minutes
Evenly spread the lemon filling on top of the crust
Bake for 30-35 minutes
Cool and cut into bars
Sprinkle with Agave Powder

BUTTERNUT SQUASH ALMOND RICOTTA CUSTARD CUPS

Ingredients

  • 2 cups very firmly packed cooked organic butternut squash
  • 1 1/2 cups kite hill almond ricotta cheese
  • 4 tbs flax eggs (1tbs flax meal to 3tbs of water. Mix in bowl. Let set in refrigerator for 15 minutes)
  • 1/2 cup organic date sugar
  • 1/2 cup organic agave syrup
  • 1 tbs Simply Organic vanilla
  • 1 tbs Simply Organic cinnamon
  • 1/2 cup melted vegan butter (Nutiva. Thrive Market or Amazon)
  • 1 cup organic almond flour (Anthony’s. Anthony’s.com or Amazon)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp xanthan gum

In a food processor blend first 9 ingredients together. Measure out the dry ingredients in a measure cup together. Add the dry ingredients to the wet and mix until incorporated. Fill paper muffin cups almost full and place in a muffin tin to cook. Bake 325 for 25-30 min.

ALMOND FLOUR GOJI BERRY COOKIES

Cover 1/2-3/4 cup of dried goji berries with orange juice. Add 1 teaspoon Simply Organic Lemon Flavor. Soak until plumped up. Takes a couple hours.

In a vitamix or food processor pulse:

  • 3 cups organic almond flour (Anthony’s. Anthony’s.com or Amazon)
  • 1/2 tsp. sea salt and baking soda and xantham gum

Add:

  • 6 tablespoons organic melted vegan butter (Nutiva. Thrive Market or Amazon)
  • 1/4 cup organic agave syrup
  • 2 tsp. stevia
  • Rind of 1 Lemon
  • 1 flax egg
    (For each flax egg combine 1tbs. ground flax meal and 3 tbs. of water. Stir, let sit in fridge for 15 min.)

Pulse to combine. Put mixed batter in a bowl. Drain the goji berries and mix them into the batter.

Take a tablespoon of cookie dough and form a ball and flatten it slightly on a cookie pan. Bake in a 350 oven for 13-15 minutes. These will be soft cookies.

BANANA CAKE

Ingredients

4 eggs
1/2 cup organic vegan butter (Nutiva. Thrive Market or Amazon)
1/4 cup applesauce
4 ripe bananas
1 teaspoon Simply Organic lemon flavor
10 dates made into a date paste in food processor
1 tsp. stevia
1 vanilla bean cut and the middle scraped out
1 cup almond milk
3 cups Organic Almond Flour (Terrasoul. Terrasoul.com or Amazon

1 1/2 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt

In a food processor:
*make date paste out of 10 dates
Add:
*1/2 cup vegan butter
*1 tsp. stevia powder or equivalent drops
*1/4 cup applesauce
*4 bananas
*lemon flavor
Blend well for at least 1 minute so the date paste is mixed well and smooth.

*Add the 4 eggs. Let them mix well with the other ingredients.
*Add the vanilla bean. Mix those vanilla bean particles well!

Mix in a large measure cup:
*3 cups Almond Flour, add 1 1/2 tsp. baking soda and 1/4 tsp. salt
1 teaspoon baking powder

Alternate adding the *flour mixture to the batter with the
*1 cup almond milk (try making it fresh)
Beat well after each addition. End up with the almond milk.

Bake in 2 oiled, lined with parchment paper and floured, round cake pans
In a 350 degree oven for 25-30 minutes

Almond Cream Cheese Frosting:
1 8oz. Pkg. of Kite Hill cream cheese
2  5.4oz. can of coconut cream (liquid drained)
1 1/2 tsp. stevia
2-3 tbs. agave
1/2 teaspoon lemon flavor
Adjust sweetness to your own taste.

Whip up the coconut cream with hand mixer. Add all the rest of ingredients in a food processor. Blend until smooth.
You will have enough icing to cover, generously, both layers and middle of the cake.
Garnish with chopped nuts.

CARROT CAKE BARS

Ingredients

  • 2 cups organic Almond Flour (Terrasoul. Terrasoul.com or Amazon)
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tbs. cinnamon
  • 1 vanilla bean
  • 1 1/2 cups ground carrots
  • 4 oz. applesauce
  • 4 eggs
  • 2/3 cups organic vegan butter
  • 1/2 cup coconut sugar
  • 2 1/2 tsp. stevia
  • 1 tsp xanthan gum
  • 1/2 cup dried cranberries or raisins
  • 1 teaspoon Simply Organic cinnamon
  • 1 teaspoon Simply Organic lemon flavor

Preheat oven to 350 degrees.

Spray an 8×8 square pan.

Sift all dry ingredients in a separate bowl. Beat eggs in a large mixing bowl with a hand mixer until creamy and light yellow. Add the vegan butter, applesauce, stevia, lemon and cinnamon and coconut sugar.  Beat on medium speed for 2 minutes. Add the dry ingredients 1/3 at a time, so it mixes thoroughly. Place batter in the 8×8 pan and bake for 20-25 minutes.

APPLE-FENNEL SAUCE

Ingredients

  • 4 apples, peeled and cut into thin slices
  • 2 cups chopped fennel
  • 1 lemon, juiced
  • 1/8 cup agave
  • 3 dates, chopped
  • 1/2 teaspoon Simply Organic lemon flavor
  • 1/2 teaspoon Simply Organic maple flavor
  • 2 peeled and cubed oranges
  • 1 teaspoon Simply Organic Cinnamon
  • 1/2 – 1 tsp. stevia

Directions

*Put the apples, fennel, dates, oranges in a baking dish.
*In a measuring cup, measure the agave.
*Add to the agave the juiced lemon, lemon and orange flavors, cinnamon and stevia.
*Pour the mixture over the apples and fennel. Mix well. Cover to bake.
*Bake in 350 degree pre-heated oven for 30 min.
*Blend in vita-mix or blender after cooking time is finished.
